Teriyaki Sauce

Jason said he wants this again so I need to remember how to make it since I threw it together from an ingredient list pieced from 5 different recipes.

  • 1 cup Mirin
  • 1 cup soy sauce
  • 2 tbsp sake
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1/4 cup sugar
  • 1 tsp light brown sugar
  • 1 tsp red pepper flakes
  • 6 cloves of garlic, cut in half
  • 1 big square inch piece of fresh ginger, cut in half

Simmer the mirin and sugar until combined. Add in all the remaining ingredients. Simmer uncovered for 15 minutes. Cover and simmer for another 10.

Cheap Pasta Sauce

I make our pasta sauce but I do it the cheap way with stuff I can buy in bulk at Costco.

1 15oz can of tomato sauce
1/2 of a 6oz can of tomato paste
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon black pepper
1 tablespoon kosher salt
2 tablespoons Italian seasoning
2 tablespoons white vinegar

Italian seasoning is equal parts of basil, oregano, thyme, rosemary and marjoram. You can get away with just basil and/or oregano, but I wouldn’t recommend making it without at least one of them. If you don’t like the vinegar then add a teaspoon of sugar until it evens out. Add a half tablespoon of butter if you want a silkier texture or a tablespoon of red pepper flakes to make it spicy.
